Let’s jump right into this DELICOUS and divine Cobb Salad! I love the protein in this salad. This great salad was never meant to be a side dish (although that is an option too), but it IS the MAIN Dish! When, I eat a filling lunch or dinner like this Cobb salad, I can easily meet my weight loss goals without feeling deprived in any way.
Why do I eat Low carb?
I love carbs. I really do. In fact, I eat a lot more carbs than most people that claim to eat “low carb”. But, from decades of dieting, I have realized one thing. That when I’m careful about the specific types of carbs are am eating, it’s much easier to control my appetite.
There something about bread, crackers, tortillas, etc. that make me constantly think about food. (read my post about quieting the food noise naturally, here!) So, instead, I make sure my carbs are from a few select sources. Specifically, fruit, oatmeal, rice, and starchy vegetables. When I can limit the carbs to those foods, the cravings diminish significanly!
Why do I eat High protein?
Then, the reason I like to eat a high protein diet, is because of the incredible benefits that research is showing to support a high protein diet. From building muscle, to glowing skin, to appetite control, there are a lot of great reasons to focus on protein. My favorite protein sources are: Eggs, egg whites, greek yogurt, protein powder, chicken, and recently I’m loving edamame! (here’s my list of top 25 protein sources I like)
How is this Cobb Salad different than the Cafe Zupas original?
I only made one change to this California Cobb Copycat salad from the Cafe Zupas restaurant original. And that was simply I didn’t add black olives! No only because I didn’t have any, but I don’t love olives. The flavor seems to take over!
I was delighted that they used goat cheese, because I LOVE goat cheese. Also, I used Bolthouse Ranch dressing for the photos I took on this page, but I also love this salad with my homemade buttermilk Ranch recipe here.

- 2 cups greens
- 1 ounce goat cheese
- 1/4 medium avocado sliced
- 1/2 medium hard boiled egg
- 1/4 cup shelled edamame
- 4 ounces chicken tenderloin cooked
- 1 slice bacon cooked and chopped
- 5 small grape tomatoes
- 2 tablespoons Bolthouse ranch dressing
