With her popular daytime talk show and growing line of kitchenware, there’s a good chance actor Drew Barrymore is already a part of your morning routine. But now, the Santa Clarita Diet star is giving fans a glimpse into her own favorite way to start the morning: a savory breakfast.

In a recent Instagram reel, Barrymore waxed poetic about her love of breakfasts rich in protein, vegetables, and not-so-sweet flavors. “Savory breakfast,” she exclaims, “congee, savory oatmeal, tofu scramble, breakfast soups, breakfast salads, breakfast tacos, fish for breakfast, cottage cheese bowls, quinoa. I love a hearty vegetable soup in the morning. I love a puree.”

We love a delicious savory breakfast, too, especially since going heavy on breakfasts with ingredients like eggs, cottage cheese, and veggies can help provide your body with lots of morning protein to start the day strong. But Barrymore gets especially excited talking about one of her suggestions, and it’s one we can’t wait to try.

“I love an egg cracked over a salad,” she gushes, “or a scramble. There are so many amazing opportunities, not to mention breakfast tacos and breakfast burritos. 

We’re no strangers to breakfast salads. Our Baby Kale Breakfast Salad with Quinoa & Strawberries is a delicious way to knock out half of the day’s veggie quota first thing in the morning, and our Breakfast Salad with Egg & Salsa Verde Vinaigrette is made with three cups of veggies, kidney beans and avocado, then topped with a fried egg. In fact, we’re betting Barrymore’s go-to “cracked” egg atop her own breakfast salads is one that’s fried sunny-side up until golden brown and delicious (although a poached egg would work great here as well). 

To make the perfect sunny-side up egg to add to your breakfast salads, heat oil in a frying pan over medium-low heat, making sure it’s nice and hot before you even think about adding your egg. Crack your egg into the heated oil and allow it to sit in the pan for about three minutes, until the whites are almost set. Next, baste the egg in its cooking oil by tilting the skillet slightly and collecting a bit of oil with a spoon. Pour spoonfuls of oil atop the egg white until it’s completely set, which should only take a minute or two. Remove that beautiful, fried egg from the pan and top your green salad with it. 

This isn’t the first time we’ve heard Barrymore talk about her love of a good, savory breakfast. On The Drew Barrymore Show, the actor got cooking with chef Geoffrey Zakarian and praised his recipe for Greek-inspired breakfast tostadas, calling the meal “incredible.” In the segment, Zakarian, too, praised the perks of eating eggs in the morning, calling them one of his favorite a.m. proteins.
