Chicken is one of my favorite proteins to cook because it’s healthy, versatile, and cooks quickly. And when dinner needs to be fast, there are so many easy chicken recipes that come together in 30 minutes or less! But if you’re anything like me, it’s easy to fall into a rut making the same few dishes on repeat (which can get a little boring). That’s why I’m always experimenting with new flavors, chicken marinades, and seasonings to keep things interesting. From bright lemony vibes to rich umami flavors, there’s no shortage of delicious ways to switch things up. So if your meal plan needs a refresh, here are my favorite quick chicken dinners that are simple, satisfying, family-friendly, and full of flavor!
Best Easy Chicken Dinner Ideas
Teriyaki Chicken: This version is a true ode to Japanese cooking with my homemade teriyaki sauce. The umami flavor and lighter texture lean more authentic, which makes this dish more similar to ones at a traditional Japanese restaurant. No overly thick and sticky sauce here! Then, pair the chicken with ginger rice and steamed broccoli for the perfect teriyaki chicken bowl.
Chicken Piccata: Whenever I want a taste of Italian cooking at home, this chicken piccata is the first thing that comes to mind. Each piece of chicken has a beautiful golden crust, and the whole dish simmers in a simple yet flavorful lemon butter wine sauce dotted with capers. It’s the best 30-minute dinner that always impresses!

The sauce is every bit sticky, sweet, and savory as you’d imagine, with a slight kick from the peppers and crunchy peanuts to tie all the textures together.

Cut the chicken: Slice the chicken breasts in half horizontally.
Coat the chicken: Mix flour, parmesan, salt, and pepper in a shallow bowl or dish. Dredge the chicken in the mixture, coating both sides.
Cook the chicken: Heat the oil and butter in a large skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side, until cooked through with a golden crust. Use tongs to remove the chicken to a plate.
Make the sauce: Add the wine and garlic to the pan, letting it simmer for 3 to 4 minutes, until reduced by about half. Then add the broth, lemon juice, capers, and butter, stirring until it begins to simmer again.
Add the chicken: Add the chicken back to the pan. Spoon the sauce on top and let it simmer for 1 to 2 minutes, until warmed through.
Serve: Garnish with parsley before serving.
