Heat the oven to 350°F. Meanwhile, toss 2 peeled, cored, and diced small Granny Smith apples, 1 tablespoon of the packed brown sugar, and 1/2 teaspoon of the ground cinnamon together in a large bowl until the apples are evenly coated. Transfer to an 8-inch round cake pan or 8-inch square baking dish in an even layer (reserve the bowl). Top with 1 tablespoon of the unsalted butter. Place the pan in the oven as it heats, until the butter is melted and apples have begun to let their juices out, about 12 minutes.
